Carrot Pineapple Muffins

Makes 12 muffins

1 3. sugar
2/3 c. applesauce
2 lg. eggs
1 t. vanilla
1 c. grated carrots
1 c. crushed pineapple

Mix together in a bowl.

In another bowl, whisk together:
1 1/2 c. flour
1 t. cinnamon
1 t. salt
1 t. baking soda
2 t. baking powder

Mix both the wet and dry ingredients together just until moistened. Bake at 350 degrees for 20-25 minutes or until a toothpick comes out clean.
